I have posted a few things about issues since the most recent update and have had multiple people agree they are also having issues. But Samsung support has been very unhelpful and are trying to lay the blame on anything BUT their app update. Very frustrated.

You may want to try performing a partition cache clear which is good for clearing out software bugs that sometimes come with these updates. I do it after every OS and security update to prevent problems like misbehaving apps or excessive battery drain.

Then the only other user troubleshooting step would be a factory reset (which would necessitate backing up all your data) or if it is in fact a hardware issue, having the device checked by a repair center.

Still wasn't working when I went to bed, but was magically fixed when I got up with no changes/additional steps on my part. Still don't believe it was my phone, especially since several other people that use Samsung Health had exactly the same problems I did.
