Samsung health does not allow sleep records where I was relaxing an watching a movie to be deleted. Instead it just adds it to my sleep record. In previous versions, I could select and delete those sections

Yes, and everyone hates that.  But whether it gets added to your nightly sleep record as a continuous thing is dependent on how soon after your relaxation time you hit the bed.  For instance, sometimes in the afternoon, I'm just relaxing in my recliner.  I apparently get so relaxed the watch registers it as sleep.  When I get up and do stuff, the recording stops and it registers as a separate sleep session, which I can delete.  If I happen to be relaxing just prior to my bedtime and then go to bed without checking the health app, that session might just be added to the night's sleep.  I am usually good at checking and catching when it's recording that way.  If you are using your phone at the time, you may see the little green light to indicate the mic is active (if you have snore tracking on).  If I see that little green light, I immediately open the health app, which turns off the recording.  If a sleep session has been registered, I delete it.

Unfortunately, at this time, Samsung has not seen fit to allow editing of the sleep record (I guess it would mess with their sleep score algorithm) nor, despite lots of requests, have they seen fit to allow notes to be added so one can note that they had a bad night because they were ill, the sleep session was not accurate because of the erroneous recording, etc.
