You can do that in Keyboard Settings. Plus there are other keyboard apps that are highly customizable. Gboard by Google is cool. Microsoft Swiftkey is another popular keyboard app that now comes pre-installed on most Samsung Devices.
You can go to settings/General Management/Keyboard list and default to select the keyboard of your choice. Whether it be pre-installed or downloaded.
It's not available in beta, but the Samsung Keys Cafe app has some pretty great customization options. Samsung Theme Park is also great for endless colors, images as backgrounds, etc.
