Could we get a feature to encrypt the whole storage and os and microsd card storage of the galaxy tab s8?

 
That used to be a feature in earlier galaxy note phones I think the note 7

@anonym0us This has been a feature of Android OS for quite a few versions now. It is automatically encrypted. That is why there is no option to turn off/on.

The microsd card or android os?

System/OS. You can also encrypt SD card but know that it will only work in the original device it was encrypted in.

And how could I do full disk encryption?

Yes but only when installed on the phone used to encrypt it. The keys are generated and stored locally, which is why others cannot use it.

Using a password/PIN/fingerprint, facial recognition or any other security method supported by device automatically encrypts it. Again, a reason why it's harder (not impossible) to access devices when you forget the PIN or password now required after restarting the phone if set.
