If you read the accepted solution, which was posted before your comment you will see that O2 sensor is still enabled and available in Samsung Health. It has just been moved to a different place in the app (it's under "Stress"). I've just verified this with the latest Android and the latest Samsung Health a/o Apr 21, 2020.
