have you tried going to your home screen, push and hold anywhere there isn't an icon and go to homescreen settings and toggle lock homescreen icons?

I just traded my s10+ for the s20 5G and I never had any issues with my fat fingers on the keyboard.

you have the ability to make the size of your keyboard larger. if you tap the gear icon on your keyboard and then style and layout you can adjust the size of keyboard as well as adjust the size of the font.
