AR Emoji skin tones

I feel like all the skin tones are really gray looking and none are reflect the "peachiness" that lighter skin tones can have. You can definitely see this when duplicating an old AR emoji that might have those older skin tones. Is this an bug or is this a permanent change? Could there be a way to just make custom skin tones to solve this issue?

Existing AR emojis aren't affected, it's when making new ones from scratch that you only have grayish colors.

How do you change the skin tone? I do not see the "face" option.  It says "looks" but that is only for hair styles. I have an S22.
