After receiving my watch and setting it up everything is working great except Google Assistant. Anytime I try to activate Google assistant, I touch the "open on phone to activate" button on my watch and receive a spinning gray circle for eternity on the phone.
I've reset the apps, the watch, reset the phone, even dealt with Samsung support and cannot get it working. I even tried reconnecting my Galaxy watch 4 classic, still no go.
I submitted this as an issue with the beta, but I wanted to see if anybody else was having the same problem.
I've followed the steps from slagg3r to remove myself from the Search Beta and retried setting up my watch. It WORKED flawlessly. Give it a shot.. good luck!
