Google wallet was gone after the Beta install/Factory Reset/Restore. I reinstalled Google wallet to the Watch 6 classic, however, I could not add any of the Credit Cards that were working before the upgrades. The error message "this watch can't be setup to tap to pay". NFC is on. It is the case for any VISA/MasterCard/Amex I have.
As @Lorr suggested, the software is not yet certified by Google, and therefore Google Pay and other secure services may not work.
