This is the One UI5 WATCH Beta forum. You need to go to the one ui6 phone beta forum. I'm not a participant in that one so I can't be more specific. If you are a participant in the phone beta you should have been sent instructions as to how to join and how to leave the beta.
when that opens look in the top right corner is a 3 dot menu. Click that and then Withdraw from beta. Next, Give it about 3 minutes then Check for Updates and the phone will have the rollback software available. NOTE TO CONSIDER. I withdrew and it wipes the phone clean so hope you followed directions and made a backup with smartswitch.
