It is a new feature in the beta go to Settings-Device Care-Auto Optimization toggle Restart When Needed to Off unfortunately we aren't able to decide when we want it any more hopefully they will change it back

Basically this. There is a possibility that your restart was because of a crash, I kept getting restarts when I was viewing my nest cameras Screenshot_20220928_003955_Device care_1000001102_1664339996.jpg
