Everything appears in grey boxes. They should be blacked out completely. Also apps with dark mode should also be completely blacked out instead of a grey tone. Gmail app still uses a grey background. Notifications appear in grey boxes. The Notifications looked better in Android 11. Youtube still has a grey background. The picture in picture player for youtube is glitchy. Sometimes i minimize my app and the pop up player never shows up and sometimes it does.

Gmail, YouTube and all Google apps dark themes are dictated by Google not Smasung. Should report your grievances about this to Google in feedback in each Google app.
About the Grey boxes, By using Samsung Theme park you can customize your Dark Mode to turn everything black like you want. Just as I have done for quite some time now. So you know, system dark mode only extends to stock Samsung apps and system apps, not to third party or Google apps. Those apps dark mode are dictated by the third party and Google app developers.
Having no issues with YouTube picture in picture on my device.
You should Go into the YouTube app settings, turn off picture in picture. Force Close the app. Then open it again and turn picture in picture back on.
Also, have you tried wiping device cache using recovery mode?

Please erase the device cache using steps below. If issue persists, Please update Samsung members app to latest version from galaxy store and send us an error report from the Samsung memberās app -> Beta Feedback -> Error Reports to help us debug the issue.
- Turn off the device.
- Press and hold the Volume Up key and the Side key.
- When the Android logo displays, release both keys.
- An 'Installing system update' message may show briefly before the Android Recovery menu options appear.
- Press the Volume down key several times to highlight Wipe cache partition.
- Press Side key to select.
- Press the Volume down key to highlight Yes, then press the Side key to select.
- When the process is complete, Reboot system now is highlighted.
- Press the Side key to restart the device.
