Google Play Wallet is now telling me that my device does not meet security requirements because I'm running a special software. Any ways around this?

This is common and it happens with other companies as well. Last year I was using an iPhone pro and the Apple app store wouldn't allow me to review apps due to running an iOS beta release.
Beta software can sometimes produce unpredicted behavior and Google doesn't want to allow that possibility to negatively affect your finances.

Go to settings, Google Services, All Services, System Services, and look for updates there . Specifically you want to look for a Play Services update. I have had no issues with Google Wallet at all during the Beta.

It's because sometimes when you have beta software this is common because it is a test software not the final release

Are you running the One UI Beta or the google play services beta?
Uncertified build errors on Google wallet are super common during beta testing since Googles play integrity server-side checks often fail on non-stable software. If its One UI Beta, bugs and build issues should be posted over in the dedicated Beta community section so the dev team can track them. If its just the Google play services beta, opting out of that specific app beta usually fixes wallet issues right away.
