Is anyone else having a hard time with the Google Play store? When I check for app updates, the app freezes. I've been having this problem since the last beta update.

Clear cache for the Play Store. If that doesn't work, clear data also. You will have to reset any settings you've changed.

Google may have a bug that is affecting the Google Playstore and the app itself currently. Even Google's own apps won't show up under apps that need updates. So like Google Find app shows me it needs an update when I go to its location on the app store, but it will not show up under apps that need updates while on the playstore looking at apps on my device.
This seems like a bug. And it may get worse before they can fix it.
Btw, never try to uninstall the Playstore app. You don't want to go through all the steps to get it back, trust me.

@CraftyMomma The playstore app cannot be uninstalled, though it can be disabled. Also, the OP mentioned "since the last beta update", meaning they are on the One UI 9 beta, which would indicate a be an issue that Samsung needs to address and made an beta error report.

If this is  a beta issue, it is much better to post this in the beta forum and especially make that an error report by using the beta feedback function in the Members app after going into the beta section. Noting that this is happening "since the last beta update", would indicate Samsung devs need to fix this.

I can't find the REMINDER app in the Play Store. It's the purple check mark icon. I've got it loaded on my tablet (Galaxy Tab S10 Lite), but can't see it in my phones (Galaxy S26 Ultra) Play Store? Anyone else have this issue?

Check the Samsung app store. All apps related to Samsung are usually there.
