These icons change with signal strength. UC is the faster 5G signal when you're not using 5G over 4G frequency. This is a carrier specific setting, control by them. Remember when AT&T uses 5GE to mislead users into thinking they were on 5G when, in fact, it was better/faster 4G connection? They paid a fine yet still do it even on phones that only support 4G. T-mobile uses 5G UC to designate connection using mmWave frequencies and other 5G icons when the connection is using 4G band

Verizon uses 5GUW, beta 1 it said 5G+

Correct. Every carrier has their unique way of identifying 5G using mmWave frequencies. UW may be confused with ultra wide band that is used for device to device data sharing. T-mobile calls it ultra capacity (UC) but all referring to faster 5G signal. Bottom line is that carrier define which icon they use depending on signal strength.
