At this time, we are not aware of any limitations to update Watch SW with One UI 6 Beta.  We will investigate and post an update as soon as possible.

Only the Bluetooth versions of the watch 4 and watch 5 have been updated. LTE versions haven't been updated.

I was just coming to say I had the same issue but I checked for an update on my watch 5 pro Bluetooth and finally downloading BWH3 for it.
