Have you followed the correct steps? Also, sometimes the update does not come right away after enrolling into the Beta, it takes a little bit. If you still cannot get the beta update, restart the watch or retake the steps.
To be qualified for Watch Beta, your device has to be Bluetooth model (ending in -0 such as R880, R900 models) and purchased in US.
If the above conditions are met, then you may follow @MatthewReiter suggestion by Installing the mandatory Beta Software (Watch Manager / Health) Clear Cache on your Samsung Members app and restarting your device.
