You should eventually receive the update. You don't have to uninstall the beta (the only way to do so is at a Samsung authorized service center anyways). It may still be rolling out in stages. Do you have an LTE version? Have you tried clearing the data/reinstalling the Galaxy Wearables app?
Ah alright! You get your updates through your carrier then, rather than directly from Samsung. You might want to reach out to them about why you haven't received the One UI Watch 5 stable release yet.
