So samsung messages and google messages aren't working on my phone, What is going on??

Maybe a carrier problem. Also, did you try to delete the Samsung Messages version you have and use the one from the store?

I did and google messages is working now but I have to keep choosing how to send the message

That is like going to be 99.9999% a carrier issue. Does it do that for every message, to certain people or when sending an active image (like a gif image)?
