Why would the metal magnetic ring placed on the phone case cause issues with proximity sensors of the phone?

Magnets by nature will cause issues with sensors on electronics as well as they can cause issues with the SPen input on the S22 Ultra

when I drove commercially, I had a metal plate on my phone case for use with a magnetic dash mount...no problem. I can't imagine having a magnet permanently attached to my phone. but that's just me.
