Even though it's been released in general for the watch 5 pro I'm stuck on this somehow

I don't participate in betas, so I don't know for sure, but it is my understanding that once a beta ends, the final version is automatically installed on the test devices.  Have you tried resetting the watch?

Tried that a few times with and without restoring data. Tried reinstalling the wearable app, it had an update too today.

I've done the beta on my phone a couple times, and you are correct, normally it updates to the current release when the beta ends.

No Samsung service center anywhere near me, computer is in storage after my old place caught fire (not dragging it to the motel), so here we are ๐Ÿคฃ

Have  you called and asked for tech support, not customer service?  Did you send an error report?

Are you having issues or are you just concerned about the outdated security patch (and the lack of the update to the stable version)?

I haven't called because I would think they would send me to a service center.

It's functional but won't update

They might, but they also may have other options or suggestions. Putting in an error report, though, may result in a fix.

I might just suck it up and put my PC together at my friends (he's storing it)

I'm not sure one can do a smart switch update on the watch via computer - I could be wrong, I never had to try, so it might not be worth the shot if it's a lot of trouble.
