Google pay no longer works since I'm in beta. I would like this to work because it is easier to pay for things

It's considered a non-official release of software, so Google Pay will not work until the full, non-Beta release is installed or you opt out of this beta and reinstall the previous OS; unfortunately, this has always been the case. You can use Samsung Pay in the meantime if you don't want to roll back or wait for the official release of this update.

Google pay never works on Beta software because it is unofficial software. It will work again once the official release comes out

During beta program, the software is not yet certified by Google, and therefore Google Pay and other secure services may not work. We apologize for the inconvenience and will post a notice once it becomes certified by Google. You may try again at that time.
