Does anyone have instructions on how to rollback your phone so we can get the official Android 12 software on my Galaxy Note 20 Ultra 5G unlocked?

There are two things you can do:
1. A downgrade ( data back is required)
2. Wait for them to give us a stable version.

You can find this info in the One UI Beta Program status in the Samsung Members settings tab

So it will upgrade from a Beta to a Stable by itself

Once the official release is available, your device will be able to receive it as a FOTA update.
