Phone goes into greyscale theme on its own

For some reason my phone is in greyscale throughout the entire system.  I reboot and it's fine for a minute, only to revert back to greyscale.

If you haven't already, might reboot phone into Maintenance mode and select to Clear the Cache Partition

Do you have any bixby routine or a scheduled dark mode ? Dark Mode would wait until screen turns off to kick in if scheduled.
