After each OS crash and restart, I noticed my Digital Wellbeing widget would always reset to 0 minutes and lose all data. So I played around and disabled Digital Wellbeing by removing access to usage data and notifications. Crashes have reduced significantly. Maybe I'm lucky and just have not had a crash since, or maybe this is one of the causes...not sure.
Settings -> Digital Wellbeing -> 3 dots -> Settings
