After testing on my watch, I was able to verify you need to download the music from YouTube music and have a YouTube Premium subscription. Do you have the YouTube premium subscription?
Yes, I have youtube music premium. When selecting a downloaded track it takes me to a connected devices screen, pressing play on the track does the same.
Yes, these seem to be for streaming directly from the watch, but through a connected device, not the built-in speakers. (I still get the same thing when following them)

I have the same issue with the new galaxy watch ultra. I don't think it is an issue from YouTube music . This Samsung watch is just unable to play YouTube music.
