With android 12 Beta I can't use Google Pay. I see on app "Your device doesn't meet security standards ".

...because this is a beta, which means it's non-final software...

To be clear, this is Google's security enforcement, not a Samsung/beta issue.

Use Samsung Pay instead while using the beta. Later you can go back to Google Pay after you have the final certified version of Android 12.

During beta program, the software is not yet certified by Google, and therefore Google Pay and other secure services may not work. We apologize for the inconvenience and will post a notice once it becomes certified by Google. You may try again at that time.
