Did you withdraw from the Beta program? Go to settings in this app (Samsung Members), find One UI Beta Program Status, then click on "Withdraw" at the bottom.
If you've already done that, then make sure your phone is connected to your PC and that Smart Switch detects the phone. On your phone, check notifications for USB options, make sure "USB for file transfer" is selected. After all that, smart switch should be able to downgrade your phone's version.

Did you do a Factory Reset, between the
Withdraw step
... and the
Downgrade step
??

Also, be sure you're selecting "Downgrade" in SmartSwitch

Hang in there and report the bugs as they come. I think it's fundamentally part of being a beta tester. If you haven't, try wiping your cache partition from the Android recovery menu that's accessed during boot up. Thanks for being part of the program.. Your feedback makes it better for us all.

Unenroll in Samsung Members. Then use Samsung Smart Switch on PC to flash Android 11 (it will say "Downgrade"). I've done it once before, so I 100% know that it works.
