Have you run diagnostics? If it passed the diagnostics, the next step would be to have it evaluated at a service location. It's an S21, so it could just be aging. I believe the S21 will no longer get updates, so you may want to consider upgrading with the upcoming unpacked promos.

Have you tried the following?
1. Force rebooting the phone by pressing and holding the power snd volume down buttons
2. Resetting your wifi, Bluuetooth and/or mobile networks? Settings/general management/reset. Then choose Reset all settings, reset mobile netwoks, reset wifi and Bluetooth settings or factory data reset (last resort action). If you do the factory reset action, make sure you back up your phone first.

You should try each if those actions in order, checking of your problem was solved and then moving on to the next action if it wasn't.

I've been having Wifi and Bluetooth issues on my S21 since the recent updates.  What works for me is every time this happens, do the following:

  1. Shut down the phone.
  2. Power up the phone into recovery mode by pressing the volume up and side button at the same time.
  3. Select "wipe cache partition" from the recovery mode menu.
  4. Reboot the phone.

There is some kind of software update affecting S21 phones that Samsung is failing to acknowledge.
