Why can't any Samsung phones ever do a software or update by itself in the background at night? Why do we always have to initiate it manually?

You can, in the smart auto updates bro. Go to your Software update settings and then go to System update prefrences. You can choose a time my friend.

It could. I have a unlocked carrier model bought it directly through Samsung and I can set auto os updates to never

If you buy carrier locked you get carrier apps you can't remove. If you get unlocked then you don't get any of those apps and get updates faster
