How many background apps would be a normal expected number on any given day? 

Do your apps show up on this list even if they are marked for not allowed to run in the background?

Mine seems to have an awful lot of running apps all the time.

there is no single "normal" number, as it depends entirely on how many apps you have installed and their permissions. however, it is common to see dozens of processes running, most of which are lightweight system services that do not significantly affect battery or performance.

to reduce the number of active apps, you can use the sleeping apps feature found in settings > battery > background usage limits. adding apps to this list prevents them from running in the background until you open them again.
