There are many of us (do a search; this is a fact) who would love to have a notes app on our wrist that will sync to our phones! There are a small number of 3rd party Wear OS note apps (that don't sync) and... Google Keep. Google Keep is heavy weight for the purpose and... not Samsung Notes. (Yes, it works on non Samsung devices. That's irrelevant.)
This is a Samsung Watch. If I can run Samsung Notes on my phone, my tablets, and my Samsung laptop, I would have thought it would be available for my watch!
A year or so ago I had submitted to Samsung, using the Members app Feedback option, a request for the ability to open and read Samsung Note files on my watch. Unfortunately, nothing ever was done with this request.

To reach someone at Samsung and make feature requests, you will need to use the Members app on a Galaxy device, visit the support tab, and navigate to "send feedback."

Samsung Reminders for Watch is more than sufficient for my needs, personally. I use my watch to stay informed with quick, glancable info. Setting reminders via Gemini on the watch accomplishes that nicely.
I reserve more robust/lengthy notetaking for the Notes app on my phone. I don't think your idea is a bad one, I just don't find it necessary and don't see it fitting into my personal workflow.
