If I set a timer on my new Ultra 2 watch, I get no resulting Now Bar on the watch's screen. I have tried both settings, Icon Only and Icon With Text and neither setting makes any difference. I have submitted feedback about this problem, but I'm just wondering if anyone else has experienced this issue.
I ran into the same problem. I am going to assume you did what I did and forgot to check the notifications. What worked for me: settings > notifications > app notifications > timer > allow notifications > reboot watch. I hope this works for you
I don't have an Ultra watch, but you said you tried with icon and text and are not getting the now bar - did you restart the watch after changing the setting? When you set it to icon only, did you not get the animation at 6:00?
I can suggest a stop gap until it gets figured out. Select a face with complications and add a timer complication. The timer will count down in the complication. I use it on my watch, as I find the now bar with the countdown totally annoying and the icon only doesn't give me the countdown (what's the point of that?)

THANK YOU! That solved the problem without even needing to reboot the watch. I never considered the Now Bar as a notification. It's been nine days since I submitted this issue to Samsung and I haven't had a response yet.
