OneUI stops several times a day on my new Galaxy Tab S9. Can I replace it with a UI that works?

Try wiping cache partition, and should fix things.
Power off phone, with Power off hold Power and volume up button. When you feel the phone vibrate, let go of buttons.
You will now be in the bootloader.
Using Power buttons for Ok, volume buttons for up and down, scroll to wipe cache partition, yes, ok, reboot.
Hope this helps
