How do I remove that circle with the number 2? I've tried everything

This is the symbol for the second SIM card that doesn't have a signal. It's a known bug. Check Good Lock QuickStar and see if you can hide it.

Do you have 2 Sim cards? Or just an eSim?

Just the one esim. I've tried turning it off then back on and I've tried resetting the phone completely. Nothing has worked

Did you try to tap on your eSIM profile to see if you can rename it, or look below at the Preferred SIM section. Ensure your eSIM is manually selected as the primary choice for Calls, Messages, and Mobile Data?

I've also tried that. The only thing I haven't done is remove it

Some carriers require you to scan your carrier's QR code to re-add it. (Only try this if you have your original carrier QR code handy!)
