Have you checked to see if your device is in Easy Mode?

That's the only setting I know of which may remove the option as the screen sizes are preset and not able to be changed.

To toggle Easy Mode, simply go to - Settings > Display > Easy Mode > On/Off

If this still doesn't work, simply reply back here and we'll troubleshoot further!

Change home screen settings to default or you can just reset your settings.

YOu can try holding your finger down on the home screen button and there will be a gear icon that says (Home and Screen) click that and it should allow to change both app and home screen grid size.

@TexasThomas,

On the Note 10+ you can long press on any empty part of a home screen, which should bring up four options - Wallpaper, Themes, Widgets, and Home Screen Settings.

Select - Home Screen Settings > Home Screen Grid - this should take you back to your home screen with four more options - 4x5, 4x6, 5x5, and 5x6.

You can select them one by one and see how they affect the layout of your home screen and choose the best option for you. Personally, I like 5x5 as it allows me to have all of my work apps below my Google search bar and weather widget without anything getting too small for me to read easily.
