If you have a fast charger, "say 45w" or more, and in the phone, turn off fast charging, will it still degrade the battery like with fast charging enabled?

Galaxy S23It will significantly reduce the degradation. Heat is the main reason of battery degradation. And 15w charging produces the least heat. Although this is helpful, the most common reason of battery degradation is letting a device reach 10% or lower battery level before charging it.

The charger does not control charge rate of the phone. It only provides voltage and current based on what the phone tells it or simply 5v 2a if phone or cable doesn't support fast charge.
