Galaxy S23go into Settings in the app, select the email account, scroll down and see what the email sync is set at. I keep mine set at syncing emails for all time and I never have anything "disappear" on me.

press and hold the email app on the home screen.
in the top right corner of the pop up. click the "i"
Click email settings
one at a time select an account.
set "email sync period" to "all time"
close and reopen the app.
scroll down and watch it sync.
