Greetings! I checked a message tab and there are messages dated back to 2019. What!! How do I set up an automatic delete for older messages? S23 Ultra.

Which Messages app are you using? If its Google Messages, it'll only have a option to delete one-time code messages, so you'll have to delete your old messages manually

In Google Messages, as was stated, you would have to manually delete older messages.  If you do not want to delete a whole conversation thread (which is the easiest way), you will have to open a chat, find your way to the top of the chat to the messages you want to delete, long press the first message and then tap subsequent messages and then hit the "delete" option on the top of the chat.  This can be tedious if you have hundreds of messages in a chat.  You might want to backup or archive your messages.  You can do this by downloading SMS backup and restore from the play store. This way you can back all your old messages up, then delete the chats and start over. Some people appreciate having older messages, especially if they are from loved ones who are no longer with us, but if most of your chatter is daily irrelevancies, by all means delete the chats.

Oh, in that case, they would either have to delete the whole chat, as I said, or go about deleting individual texts.  I don't know how one doesn't notice for years that they have all their historical messages.

Yeah, i basically asked them what messaging app they're using and like clockwork, they said they're using Google Messages, which i guess is a no-brainer cuz alotta people (myself included) use it alot
