For calls, select your contact in the contacts app, tap the three dots on the bottom right and select "change ringtone". For messages, open the chat, select details/notifications and assign a sound to the chat. The sound stays with the chat, not the contact, so you will have to reassign the sound if you delete the chat and start a new one. It's anybody's guess why it's this way.
