S23: How can I turn off auto updates from installing?

My phone (S23, ~2 years old, unlocked, Red Pocket service which is an offshoot of AT&T) updates itself at every software update. Last time I went into the developer mode and changed it according to forum and reddit posts, but today it still updated itself. It's frustrating because it will do it while I'm using the phone, like once I was waiting for a Lyft in another country and it restarted itself to update which was a huge problem, and again it restarted itself to update while I was using my maps to navigate in a city I'd never been before. It's not even really about the update itself but my autonomy over the phone I paid for and paid to unlock - it's mine and if I want out of date software, that's on me. I want to update it when I have the time to, not just whenever it wants me to. So besides developer mode, which doesn't seem to have worked, is there a way to turn this off? And if not, can I submit a complaint about it to an actual Samsung representative?

I understand that unexpected updates can be frustrating, but updates are not optional. Even with the settings you mentioned enabled, your device will eventually update automatically. For this reason, it is best to schedule updates for a convenient time as soon as they are available.

You agreed to this in the TOS and EULA when you first set up the device. At the end of the day, you may own the hardware, but Samsung owns the software and licenses it to you, hence why the agreement is necessary.

Ok - then how do I stop it from updating while I'm using it? Like can I schedule it to happen in the middle of the night or something instead of while it is actively in use? Because it's not like if I miss my Lyft Samsung's gonna pay for the new one. 

Also, why? What does Samsung get out of my phone updating?

Yes, when you download an update it gives you the option to either "schedule install" or "install now." The forced install starts if you max out the amount of times you can delay updating.

Samsung wants devices to be updated because updates include security improvements. This protects you from threats and helps maintain their reputation as a company. Also, it helps maintain uniformity across devices, making sure all samsung device look and function the same, while giving you the latest and greatest features.

Google's new policy, you have 5 days to schedule your update, if you haven't installed the update in that time frame, it will automatically install on its own.

Go to Settings>Software Update>Auto Download
Then select how you want to download and install your updates.
