I needed to change the card my watch would use through tap to pay / NFC. After adding the new card, I noticed the Samsung Pay app did not have an option to remove the old card. I did find a way to remove it from the watch app, where you press and hold when you are ready to pay.
If your in the Samsung wallet app select menu at the bottom then click Payment card then tap the card you want to delete and a separate page will open tap the 3 dots in the top right and select delete card
