Is there a way to set my galaxy watch to track my sleep schedule without me wearing it ? I charge it at night with all my other devices

Sorry that is not possible. You must wear the watch so it can gather information on heart rate, oxygen level, skin temperature, movement, etc.

Charge your watch while you are getting ready in the morning.

Depending on your battery level when you wake up, you need at least an hour for a full charge. Even if it only gets to 90%, it should still last the working day, and you can boost it when you get home.  There will be a transition period of the charging cycle.  You should be getting 32-36 hours of uptime on your watch, so switching to putting it on the charger immediately when you wake up and then getting ready for your day, should work for you.  Otherwise, you can take off your watch and charge it in the evening before you are ready to go to sleep.  Incorporate it into your daily routine.

The watch uses sensors on the back of it to track your sleep parameters. If you aren't wearing it, those sensors have nothing to track.

@realaud As an alternative, you could get the Samsung Ring. Then you could wear the Ring at night while the watch chargers. 

I charge my Ring once a week. Typically it still has 28% remaining when I charge it.

I don't need to charge my watch at night.  It's ingrained for me to charge in the morning.  I can't wear rings anyway - skin allergies.

I put mine on the charger when I shower, wear it again when it's fully charged.
