It would be nice if I could quickly and easily temporarily silence any notification source through the notifications pane. After a specified amount of time, notifications would resume from the source(s). Also to be able to do that for a temporary quiet mode.
Or have I missed it somewhere?

Do Not Disturb (DND) lets you do that.

Do not disturb will silence all notifications from all apps that you don't specifically exclude.  If you only want relief from one or two apps, you can create a routine to silence that specific app notification for the time period you select.  You can create different routines for different times/apps or edit the routine as needed.

I don't want to make a whole routine for when I randomly want to mute any app that's popping off at the moment, but I need a majority of my notifications to stay on.
I'm mainly thinking of Snapchat and Microsoft Teams

Well, you can always just turn off the sound for those apps, you will still get your notifications, they just won't make any sound.
