We understand the frustration the misleading notification can cause and recommend clearing the app's cache or data as a resolution as mentioned by@Patriot1776USA .
If clearing the app's information does not properly correct this matter; you will want to reset the tablet.
To Reset the tablet follow these in steps:
Settings> General Management> Reset> Factory data reset> Delete All
Be sure to click " ✓ Accept as Solution" when you find an answer that works for you.

Tablets@Kornfanforever IME, YouTube app isn't showing you only the amount of notifications that would appear in your notification bar. If you open the YouTube app and click on the bell icon in upper right, you will see all of the alerts about new posts on subscriptions, etc. Merely clicking that bell and opening that screen will remove the items that aren't phone notifications.
My YouTube had a 999+ on the icon. I open YouTube, clicked on the bell and the number on the icon immediately dropped to 5 which matches how many actual phone notifications I have from YouTube.

TabletsSounds like a notification sync bug rather than anything you're missing. Try clearing the app cache or signing out and back in to refresh the notification count. If it still shows 5 unread notifications, it's worth reporting to Samsung Support so they can investigate.
