Just because the line is in the address bar, does not mean you have to fill it in.  If you only want to send to one recipient, you only need to enter the recipient in the "to" line and leave the others blank.

When we respond to emails, my email address is automatically included.

I have already reviewed the email app settings, specifically the 'Always CC/BCC Myself' option, and confirmed that it is set to 'None.

Did you log into your email providers account from a browser and verify the settings there, as well as in the samsung email app?

Oh, I never had that on any of my Samsung phones. I hear people talk about it, but never saw or used it.  If this is recent behavior, try going to the app settings/storage and deleting the cache and/or data.  If that doesn't work, you can try uninstalling and reinstalling the app but clearing the data & cache does essentially the same thing.  You can try another mail app.
