You might have a routine set. I would check in modes and routines.

Hello ccTown361guy,

Thank you for posting. Welcome to the Samsung Community. We understand your Samsung Gallery is displaying in grayscale. We will be happy to help. Sometimes, a grayscale is displayed when a feature like a bedtime mode or dark mode are enabled.

Here is how to disable bedtime mode if turned on:
Go to settings> Digital Wellbeing and parental controls> Bedtime mode> Disable the Bedtime mode by tapping the switch next to turn on scheduled.

Follow these steps to disable Dark mode which is used to reduce eye strain.
Go to Settings> Display> If Dark mode is enabled select Light mode

Please, double check accessibility options for impaired users are not causing this issue:
Go to Settings> Accessibility> Visibility enhancements> color adjustment and tap the switch to turn off

Check Power Saving mode which is used to conserve battery power and reduces the screen brightness.

Go to Settings> Battery and Device Care> Battery> Power Saving Mode> switch the toggle off

If the above steps have not solved this issue reset your phone settings to default without erasing apps or data.
Go to settings> tap General Management> tap Reset> Reset all settings> tap reset to confirm> your phone will restart.

Sometimes a phone fails to perform properly when a third party app is causing the issue. Safe Mode allows you to identify if this is the reason.

Press and hold the side button and volume down button at the same time> tap Safe mode icon when it appears> Safe mode will display at the bottom of screen> Go to gallery app and check if issue is still ongoing> if issue is no longer there a third party app is causing this> exit Safe mode by restarting device> Uninstall most recent apps until malicious app is uninstalled

The next thing to do is to back up your device and perform a Factory Data Reset.  This reset will reset your device completely, and you will complete the initial set up for your device. After you have backed up your device
Go to Settings> tap General Management> Reset> tap Factory Data Reset> tap Reset> Your phone will delete all data, and you will start from initial set up

If the troubleshooting is not helpful, the phone will need to be evaluated by a certified technician.
