I have no sim card, so why is my phone asking for one all of a sudden?

I would suggest contacting your carrier they may be an issue with your esim

Thanks so much. I've attempted to call from my phone, however, I can't make any outbound calls, as my phone continues to indicate : NO SIM CARD?

Yeah, it sounds like an issue with the esim you've been using. You would need to contact them for support in fixing the esim or getting a physical sim installed
