Why do pictures come through message app like this with iPhones to my S21Ultra

MMS significantly reduces image quality. That's what iPhone uses to send texts to phones that doesn't have iMessage. Get your friends or family to send it via other messaging apps like Facebook Messenger, Telegram, Line, etc.
