How can I not include contacts from certain accounts?

How can I not include contacts from certain accounts, i.e. Google accounts, in the default Galaxy S21 Contacts app? Some of the Google accounts I have, I would like to retrieve emails but I don't want the contacts synced to the Contacts app. 

It used to be you could unselected the account(s) in the Contacts app and those would not be included in the Contacts app.
Why was that taken away?

In the Contacts app click on the 3 lines on the left then click the google account with your email under it. You should be able to see Create Custom List. If you want only phone numbers to show within the contacts app, you can select Phone Numbers Only and uncheck My Contacts.
